Not all mountains are equal. Not all Mao Feng is the same.
Huangshan produces Mao Feng across many of its valleys and slopes. But within Huangshan, there is a place that tea growers speak of differently: Nianyuan — the inner sanctum of the mountain, where the altitude is higher, the mist is thicker, the soil is richer in minerals, and the temperature swings between day and night are wider than anywhere else on the mountain.
These conditions do something to the tea. They slow it down. They force the leaves to develop more slowly, to accumulate more of the compounds that create flavour and fragrance.
